This Gluten Free Paleo Sausage Gravy is literally so easy. If you can brown some meat and boil some veggies, you can make this recipe! Similar to traditional country sausage gravy, this paleo version is decadently creamy and comforting. Unlike traditional country sausage gravy, this paleo gluten free sausage gravy uses cauliflower and cashews to make a cream sauce instead of milk thickened with a roux! It’s so deceivingly healthy, I swear no one will know it’s secretly loaded with veggies!
Ingredients in Gluten Free Paleo Sausage Gravy
Unlike a lot of gluten free and paleo recipes, this recipe comes together with only 5 ingredients that are easy to find! Here is what you’ll need to make this gluten free sausage gravy:
- Breakfast Sausage. Because you can’t have sausage and gravy without the sausage! Breakfast sausage also is called country sausage sometimes. You’ve got a few options here: you can either make your own sausage or buy a roll of breakfast sausage at the store. Store bought versions typically contain sugar and might have gluten containing fillers, so make sure to check the ingredients list. If you’re following a paleo diet, making your own is super easy and takes no more than 5 minutes to mix up. - Cauliflower. Boiled cauliflower blended with cashews is how I make my creamy sauce for this gluten free sausage gravy. I use frozen cauliflower since it’s easier and typically cheaper.
- Cashews. We will use raw cashews soaked in hot chicken stock and blended with the cauliflower to make the cream sauce.
- Chicken Stock. Boiling the cauliflower and soaking the cashews in chicken stock adds flavor to the dish.
- Olive Oil. For browning the meat. You can substitute with ghee if you prefer.
How to Make Gluten Free Paleo Sausage Gravy
This recipe is seriously so easy to make! I love it for busy weeknights. Here is how to make Gluten Free Paleo Sausage Gravy in 4 easy steps:
- Boil. In a medium saucepan, bring the chicken stock and cauliflower to a boil. Once cooked through, remove from the heat and add the cashews to soak and set aside.
- Brown. In a large deep skillet, brown the sausage gravy in the olive oil until cooked through.
- Blend. Once the cauliflower and cashew mixture has slightly cooled, add to a blender and blend until smooth.
- Mix. Add the cauliflower cream sauce to the cooked sausage and serve!

Yes! While gravy is traditionally made with milk and a roux made of drippings and flour, this recipe uses cauliflower and cashews to make the creamy “gravy” sauce. It’s so good you won’t miss the traditional version!
Does this gluten free paleo sausage gravy reheat well?
Yep! You can reheat this sausage gravy in the microwave or on the stove. Like traditional sausage gravy, it will thicken when cooled, so mix in a splash of chicken stock or water to thin it out a bit when reheating.

Gluten Free Paleo Sausage Gravy
Ingredients
- 2 tbsp olive oil Can substitute ghee
- 1 lb breakfast sausage See note 1 below
- 12 oz frozen cauliflower
- 3/4 cup raw cashews
- 2 cups chicken stock
Instructions

Bring 1 1/2 cups of chicken stock to a boil in a medium-sized saucepan with a lid. Add cauliflower, cover, and cook for 5 minutes or until cauliflower is cooked through and very soft. Remove from heat and add cashews. Cover and set aside.

While the cauliflower cooks, warm olive oil in a large skillet over medium heat. Add the breakfast sausage and cook, breaking up while cooking until no longer pink and cooked through.
Once the sausage is cooked through, deglaze the skillet with the remaining 1/2 cup chicken stock, scraping up any brown bits that have developed on the bottom of the skillet.

Carefully transfer the cooled cauliflower and cashew mixture to a blender. Blend on high until a smooth sauce is formed, being sure to scrape down the sides as needed. Slowly remove the lid, being careful of splatters. Add the cream sauce to the skillet with the sausage and fold to incorporate. Add additional chicken stock as desired if the gravy is too thick. Remove from heat and serve!
