This Parmesan Bacon Rotisserie Chicken Salad recipe is inspired from one of our favorite restaurants in Indianapolis, Cafe Patachou! Using a rotisserie chicken makes this so easy to throw together in under 30 minutes.
About Rotisserie Chicken Salad with Parmesan and Bacon
When Neal and I lived in Indianapolis, we lived riight down the street from Cafe Patachou. It quickly became one of our favorite places to go and they have this amazing chicken salad with bacon, parmesan cheese, and celery. Oh man, it is so freakin’ good! I’ve been craving their chicken salad so much and had to recreate it with this Parmesan Bacon Rotisserie Chicken Salad Recipe. It has some bold flavors like smoky bacon, salty parmesan cheese, and crunchy celery bites. Want some good news? Leftovers are better the next day as the flavors have time to mingle in the fridge making this a great chicken salad to meal prep or pack the leftovers for work the next day.
Ingredients in Parmesan Bacon Rotisserie Chicken Salad
These ingredients will make the most delicious and magical Parmesan Bacon Rotisserie Chicken Salad:
- Cooked chicken. I like to use shredded rotisserie chicken from our local natural food grocery because it’s so easy and delicious. The roasted chicken flavor makes this salad so good! You can also use leftover roasted chicken, shredded chicken, or poached chicken if you prefer.
- Parmesan cheese. The savory, salty, and slightly nutty flavors from the parmesan cheese is so good in this chicken salad!
- Bacon. The bacony-smoky goodness makes this chicken salad so irresistible and addicting. I prefer to use a sugar-free bacon like Applegate or Pederson’s.
- Dijon mustard. For a little extra bit of flavor.
- Shallot. I love the slight non-aggressive onion flavor shallot adds. If you can’t find shallots, you can use half of a sweet onion.
- Celery. For just the perfect amount of crispy crunch.
- Sour cream and mayonnaise. Using equal parts sour cream and mayonnaise provides that great creamy consistency without the flavor being to rich or heavy.
- Salt and pepper. Lots of black pepper is the finishing touch!
How to Serve
Here are some ideas for how to serve and enjoy this chicken salad:
- Classic chicken salad sandwich. You can use either your favorite bread, gluten free bread, or croissant. I think this would be delicious served with fresh ripe tomato slices, crisp lettuce, and a slice or two of red onions or sliced cucumber for extra crunch.
- Served with crackers. Okay this is my personal favorite way to eat this chicken salad because I love the crunch from the crackers with the creamy chicken salad. My personal favorite are Nut Thin crackers which are gluten free.
- Wrap in lettuce leaves. On a low-carb diet? Serve the chicken salad in butter lettuce leaf cups. It’s a delicious way to lighten up chicken salad without extra carbs or calories from the bread or crackers. Fresh lettuce leaves let the flavors of the chicken salad shine through.

Parmesan Bacon Rotisserie Chicken Salad
This Parmesan Bacon Rotisserie Chicken Salad recipe is inspired from one of our favorite restaurants in Indianapolis, Cafe Patachou! Using a rotisserie chicken makes this so easy to throw together in under 30 minutes.
Ingredients
- 4 cups cooked chicken shredded (I like to use rotisserie chicken)
- 8 slices bacon chopped
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon dijon mustard
- 2 shallots minced
- 4 celery stalks diced
- 1/4 teaspoon salt I use pink Himalayan
- 1/2 teaspoon black pepper
- 3/4 cup grated parmesan cheese
- Serving suggestions: Bread gluten free bread, crackers, lettuce leaves, salad
Instructions

Cook the bacon in a large skillet until crispy to make bacon crumbles, about 8 minutes. Place cooked bacon crumbles on a large plate lined with a few paper towels and blot away any residual bacon grease.

In a large bowl, mix the sour cream, mayonnaise, dijon mustard, salt and pepper until combined. Add the cooked shredded chicken, shallots, diced celery, parmesan cheese, and bacon. Mix to combine until chicken is coated with the sour cream and mayonnaise dressing.

Serve on a bed of lettuce, as a sandwich, with crackers, or as a lettuce wrap.
Recipe Notes
- Leftovers will keep in the refrigerator for 5 days.
- Use rotisserie chicken to save time.

Do you ever cook with nutritional yeast? It has a kinda cheesy flavor that may go well in this recipe! I also love white miso paste for some cheesy flavor when I don’t want to use any dairy. You could try a tablespoon mixed in with the mayonnaise and leave out the sour cream! I hope you try it! Thanks for your comment 🙂

If anyone does not want to use rotisserie chicken, you can make a pretty simple cooked breast. Take 3 breasts, cover them in salt, pepper, thyme, basil, and oregano. Cook in a cast iron skillet until mostly cooked through, then move into an oven preheated to 450. Cook for 15 minutes or until completely done.
That’s a great tip! I will also cook chicken breasts in the Instant Pot or crock pot with poultry seasoning and shred that instead of a rotisserie chicken.
