I teased you all about these pumpkin pie date rolls in this post. The inspiration for these date rolls came from Natural Delights Pumpkin Pie Spiced Date Rolls found at Sam’s Club. I’m not going to lie, I didn’t think the date rolls would be very good but WOW they were delicious. When I checked the ingredients list I was happy to see they were made with simple and wholesome ingredients! I set out to recreate the pumpkin pie date rolls at home and am so excited with the final product. All ingredients are shelf stable, making these a great snack to bring into the office for a festive treat, pack into lunch boxes, or bring along as a travel snack.
I made a few changes from the Natural Delights Date Rolls. I swapped crushed pecans for unsweetened coconut flakes and used my homemade pumpkin pie spice. While the Natural Delights Date Rolls call for medjool dates, I prefer these deglet noor dates as their flavor and texture are unbeatable. You can sub your favorite pitted medjool date in this recipe if you prefer.
To make these date rolls, you only need 3 ingredients: pitted dates, pumpkin pie spice, and shredded unsweetened coconut. These pumpkin pie date rolls are simple to make as well and a batch can be made in about 10 minutes using a food processor. This recipe is written to make 10 mini date rolls but can easily be doubled or tripled.

Pumpkin Pie Date Rolls
- Add dates to a food processor and pulse until dates are broken down into little pieces. Add pumpkin pie spice, and process until a smooth paste is formed and the mixture turns into a ball.
- Place shredded coconut in a shallow bowl. Pinch off a little bit of the date mixture, roll in coconut and test for taste. Add more seasoning if required and process to incorporate.
- Pinch off a tablespoon amount of the date mixture and shape the mixture into a mini roll. Roll the date rolls in the shredded coconut, covering completely. Transfer date rolls to an airtight container to store.
