During the summer, I can’t get enough of caprese salads. I want to eat caprese salads anyway I can and this skillet is my favorite way to do just that! This skillet has all the key flavors of caprese with melty mozzarella swimming in tomato sauce. I add cooked quinoa, cannellini beans, and soft cooked eggs to make it a filling and healthy meal. All sprinkled with fresh basil right before serving. YUM! While this is good for a breakfast, I love to serve this for dinner alongside a glass of crisp white wine (or serve it for lunch with a glass of wine if you’re in the brunchin’ mood ;)). To make this super easy (and in less than 20 minutes), I use pre-made marinara sauce (Kirkland makes my favorite–Costco, FTW!), but if you have the time, homemade marinara sauce makes this skillet even better. A drizzle of balsamic vinegar on top would not be out of place!
Fresh basil, melted mozzarella and tomato-y goodness! What more could you want?!
