Since our trip to Italy, I’ve been inspired to experiment with new recipes and ways to incorporate more produce into my daily meals. The result of some experiments are these delicious roasted grape tomatoes!
These tomatoes are lightly tossed in olive oil, salt, pepper, garlic, and rosemary and roasted till soft. The roasting makes them sweet, tangy, and melt-in-your-mouth good. These would be a great side to serve along a roast, spooned over ricotta cheese on a baguette, or served mixed with some scrambled eggs for a delicious breakfast!
