Without any hesitation, fresh and ripe tomatoes are my favorite farmers market find. Ripe tomatoes are one of the most delicious foods in the world. A perfectly ripe tomato has the ability to elevate the most simplest of recipes and is best in recipes that allow its natural flavors to shine through.
Enter this roasted tomato caprese salad.
I discussed my love of all things caprese in this post, but roasting the tomatoes is perhaps my favorite way to enjoy a caprese salad. I found these multi-colored cherry tomatoes at the farmers market and just could not resist. Roasting the tomatoes brings out the flavors, making them more intense. I borrowed from this recipe (one of my first posted!), and tossed the tomatoes with olive oil, lots of fresh garlic, and a medley of herbs. I threw those tomatoes on a silipat (a true must have for roasting and baking) and roasted at about 375 until the tomatoes were bursting with juices and the garlic was slightly sweet. I then toss them with ciliegine mozzarella and fresh basil. Ciliegine mozzarella, or cherry sized mozzarella balls, are a perfect pair with cherry tomatoes as they are just about the exact same size. I absolutely adore pairing ciliegine with cherry tomatoes and believe it is a match made in heaven.
This roasted tomato caprese salad is amazing served as a side and will serve about 4 people as a side. You’ll want to serve this roasted tomato caprese salad with some crusty bread (I’m wanting to try this recipe for gluten free french bread). I’m also imaging it atop a bed of polenta and can confirm this is delicious tossed with some freshly cooked pasta–when tossed with the warm pasta the cheese melts slightly, the warm tomato juices create their own decadent sauce, and it becomes absolute perfection. Tossed with pasta is the way I would serve it to guests for an easy yet delicious meal. Of course, a glass of chardonnay would be the perfect accompaniment.
Is anything better in the summer than easy, low maintenance meals that are good enough to serve to guests? I don’t think so!
