These tomatoes are lightly tossed in olive oil, salt, pepper, garlic, and rosemary and roasted until soft and bursting with flavor.
Since our trip to Italy, I’ve been inspired to experiment with new recipes and ways to incorporate more produce into my daily meals. The result of some experiments are these delicious roasted grape tomatoes!
The roasting makes them sweet, tangy, and melt-in-your-mouth good. These would be a great side to serve along a roast, spooned over ricotta cheese on a baguette, or served mixed with some scrambled eggs for a delicious breakfast!

Roasted Grape Tomatoes
- 2 pints grape tomatoes
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp dried rosemary
- 2 cloves garlic chopped
- Preheat the oven to 375 degrees.
- Wash and dry the tomatoes.
- Toss in a bowl with the olive oil, salt, pepper, rosemary, and garlic. Place in a single layer on a baking pan.
- Roast for 15-20 minutes until tomatoes are bursting.
