That’s an entirely different story. I love getting down with some Mexican breakfast recipes to mix it up. When breakfast is boring or unappetizing, I find myself all too often skipping the most important meal of the day.

These Easy Baked Chilaquiles Verdes is an easy take on a traditional Mexican breakfast dish. Store-bought salsa verde adds a ton of flavor with minimal effort! You can use your favorite toppings to customize this dish, but my favorites are cilantro, radishes, and crumbly cotija cheese!
