Need some breakfast inspiration? Here are 9 delicious Mexican Breakfast Recipes to add some spice to your morning routine!
Honestly, I’m not much of a traditional breakfast person. I’d much rather break my fast with a salad, soup, or tacos any day. But what if that breakfast is a Mexican breakfast? That’s an entirely different story. I love getting down with some Mexican breakfast recipes to mix it up. When breakfast is boring or unappetizing, I find myself all too often skipping the most important meal of the day.
Easy Mexican Breakfast Recipes
Here’s a list of 9 Mexican breakfast recipes to give some inspiration. These recipes vary from more traditional Mexican breakfast recipes to Mexican fusion breakfast recipes. All recipes are gluten-free, and many are easily dairy-free as well! Let me know in the comments which ones you’ll be making for breakfast next!
Easy Chilaquiles Verdes
India from Indiana
These Easy Baked Chilaquiles Verdes is an easy take on a traditional Mexican breakfast dish. Store-bought salsa verde adds a ton of flavor with minimal effort! You can use your favorite toppings to customize this dish, but my favorites are cilantro, radishes, and crumbly cotija cheese!
Chorizo Con Papas Breakfast Tacos
The Defined Dish
A perfect day of eating for me would be tacos for breakfast, tacos for lunch, and tacos for dinner. I would start that day with these Chorizo Con Papas Breakfast Tacos by The Defined Dish. These tacos have potatoes, chorizo, and eggs! If you’re vegetarian, try out Trader Joe’s Soy Chorizo for a chorizo alternative.
Horchata Smoothie
24 Carrot Life
This smoothie is so creative and uses both horchata and frozen horchata pulp to add great horchata flavor to this smoothie. The horchata ingredients are blended with dates, a frozen banana, vanilla, and spices! To make this more filling and to add some protein, I would add a handful of oats and a couple scoops of Vital Proteins Collagen or a vanilla flavored protein powder.
Chorizo Breakfast Bowls
Skinny Taste
Spicy chorizo, roasted potatoes, eggs, cheese, and cilantro? Sign me up! This is a breakfast bowl I can get behind! I like Gina’s idea of adding black beans for extra protein and fiber.
Tex Mex Chorizo Migas
Fearless Dining
Have you ever had Migas? They’re a traditional Mexican breakfast made of scrambled eggs cooked with corn tortillas and other ingredients. Growing up, my mom, her friend, and I often went to Laredo — a local tortilleria and Mexican restaurant in Fort Wayne — for breakfast. One of us would always get Migas with cactus. This recipe by Fearless Dining is a yummy take on a traditional dish!
Mexican Spaghetti Squash Hashbrowns
Strength and Sunshine
I love getting a good dose of veggies first thing in the morning, and this vegan recipe by Strength and Sunshine is PACKED with vegetables like spaghetti squash, poblano peppers, and chayote squash, and tomatillos! So many tasty flavors are going on here. Add a dash of hot sauce, a sprinkle of cilantro, and it will satisfy all appetites!
Chorizo Spinach Egg Scramble
Good Life Eats
This scramble is a seriously easy recipe but loaded with flavor thanks to the chorizo. I’d mix in some salsa verde for some extra flavor and maybe top with a diced avocado as well! Or perhaps even a can of black beans for some extra fiber. Yum!
Gluten Free Mexican Breakfast Bowls
Everyday Maven
This Mexican breakfast bowl is a mix between a salad, breakfast, and taco night! The combination of arugula, refried black beans, and eggs will easily keep you full until lunch. I’d like to add some avocado and to this as well!
Easy Huevos Rancheros
Savory Experiments
I almost always have to get Huevos Ranchers if I see it on a menu at a Mexican restaurant. This Easy Huevos Rancheros looks so simple to make at home, but doesn’t skimp on flavor! You can make this recipe with either a homemade salsa or your favorite store-bought brand.
