Tomatillo Lime Salsa Verde! The only salsa verde recipe you’ll need in your arsenal. This no-cook sauce comes together in 5 minutes or less and has the Midas touch–everything it touches turns insanely delicious! Make this sauce and it will instantly become your new jam. I love to put this on eggs, tacos, burrito bowls, nachos…absolutely everything. It is just as good as the green salsa verde taco restaurants serve in the squeeze bottles on the side. I can’t get enough of it.
This recipe is adapted from Rick Bayless’s cookbook Authentic Mexican, which if you’re in the market for an all-encompassing Mexican cookbook, this is your book! I’ve talked about it in this post before, but I continually reference this book whenever I’m in the mood for delicious Mexican food.
Rick Bayless gives the method for using either fresh tomatillos or canned tomatillos. I prefer to use canned, since it’s easier and I don’t notice much of a taste difference. However, if you want to use fresh, you’ll boil about 5 to 6 tomatillos in salted water until barely tender, or about 8 to 10 minutes. For canned, you only need to drain them–win! I could find canned tomatillos at Meijer in Indianapolis, but haven’t had any luck finding them in our many local Walmarts. A hispanic grocery store should have them and I suggest you stock up when you’re there!
